Amaranth Red Garnet, also known as Red Leaves Amaranth, is a striking variety of Amaranthus tricolor grown both as an edible leafy vegetable and as a highly decorative garden plant. It combines colorful deep red foliage with vivid magenta to red flower heads, making it an excellent choice for vegetable gardens, ornamental borders and edible landscapes. Red Garnet is a warm-season annual that grows vigorously in full sun and can develop into a tall, impressive plant. Depending on growing conditions, amaranth plants can reach well over 2 meters in height, while other growing references report typical heights of approximately 2 to 3 meters for mature plants.
The leaves are fleshy and generally oval shaped, sometimes developing pointed tips. Red Garnet is valued for its intense coloration, with foliage ranging from deep red and burgundy to shades of purple and green. The combination of colorful foliage and tall flower stalks gives this amaranth strong ornamental value. The flower heads develop from the central stalk and can display vivid purple, magenta and red tones.
Amaranth is widely cultivated as a leafy vegetable, particularly in Asian, African and Caribbean cuisines. The young leaves are tender, mild and slightly nutty and can be eaten raw or cooked. Young leaves are excellent for salads, while larger mature leaves are better suited to cooking, steaming, sautéing, stewing and braising. They can be prepared in much the same way as spinach, Swiss chard or beet greens. For the best eating quality, harvest leaves while they are young and tender. As plants mature and begin producing flower stalks, the leaves can become more fibrous and stronger in flavor.
Amaranth is a warm-season crop and performs best in full sun and well-drained soil. For reliable germination, sow after the danger of frost has passed and the soil has warmed sufficiently. Current growing references recommend soil temperatures of approximately 21°C or higher for germination. The seeds are very small and should not be planted deeply. Sow them thinly and keep the seedbed evenly moist until germination. Under warm conditions, germination can occur in approximately 7 to 14 days. Once established, amaranth is relatively drought tolerant, although consistent moisture encourages more tender and productive leaves.
Young leaves can be harvested as soon as they are large enough to eat. Harvest individual outer leaves regularly for a continuous supply of fresh greens. For the most tender leaves, harvest before extensive flowering. Mature seed heads can also be allowed to develop for seed production. The seeds are edible and can be cooked as a grain or popped in a dry pan in a similar way to miniature popcorn.
Red Garnet amaranth greens can be eaten raw or cooked. Young leaves are suitable for salads, while mature leaves can be added to soups, stews and cooked vegetable dishes. The greens pair well with garlic, onion, lemon, sesame, soy sauce, mushrooms, herbs, cheeses and a wide range of savory dishes. The edible seeds provide another use for the plant and can be cooked or popped.
