Japanese Pepper - Sanshō Seeds (Zanthoxylum piperitum)

🌱 Japanese Pepper (Sanshō, Zanthoxylum piperitum) 🌿 is a deciduous aromatic spiny shrub or small tree in the citrus family (Rutaceae), native to Japan, Korea, and parts of China. It grows up to 3 meters tall and produces axillary yellow-green flowers 🌼 in spring. Male and female flowers grow on separate plants; female plants produce 5 mm peppercorn berries 🌶️, which turn scarlet in autumn and scatter black seeds. The tree has sharp thorns, pinnate leaves with 5–9 ovate leaflets, and is an important host for indigenous Japanese swallowtail butterflies.

Culinary uses are extensive: berries are ground into kona-zanshō spice, a key ingredient in shichimi spice blends, or sprinkled on grilled eel (kabayaki unagi). Young leaves (ki no mé) garnish fish, soups, or are pounded into a miso-based paste for aemono dishes. In Korea, the plant (chopi) is used in soups, pancakes, pickles, and fermented condiments. The wood is thick and aromatic, traditionally used for pestles and craft items, while the fruit husks have medicinal uses similar to Sichuan pepper.

  • Germination: Seeds germinate slowly; expect 4–8 weeks or longer under optimal tropical/subtropical conditions.

  • Transplanting: Once seedlings reach 10–15 cm, transplant to permanent locations. Male and female plants are needed for fruit production.

  • Care: Prune lightly in winter to maintain shape, mulch to retain moisture, and protect young shoots from frost.
