Chayote (Sechium edule), also known as christophene, chuchu, mirliton, cho-cho, or Labu Siam, is an edible climbing plant from the gourd family (Cucurbitaceae), related to melons, cucumbers, and squash. This versatile plant produces pear-shaped fruits, typically 10–20 cm long, with smooth to wrinkled light green skin and crisp, mild flesh surrounding a single large flattened seed. While the seed is edible with a nutty flavor, it is often discarded.
The vine can grow along the ground or climb supports, reaching up to 12 meters when trained on trellises or poles. Leaves are heart-shaped, 10–25 cm wide, and equipped with tendrils for climbing. Male flowers grow in clusters, while female flowers are usually solitary, eventually developing into the familiar pear-shaped fruit. Some varieties may produce spiny fruits.
Hardiness: Chayote is hardy to about -2°C, thriving in warm subtropical and tropical climates. It requires frost-free conditions, as colder temperatures can damage or kill the vine.
